What Exactly Is Kimbap?
Kimbap (also written gimbap) is Korea’s answer to the packed lunch. The name is two words: gim (김, the roasted seaweed sheet) and bap (밥, cooked rice). You spread seasoned rice on a sheet of roasted seaweed, line up fillings across the middle — egg, pickled radish, spinach, carrot, spam or canned tuna — and sometimes kimchi itself — roll it tight with a bamboo mat, and slice it into rounds.
It has been eaten in Korea since at least the 1900s. Street stalls, school lunchboxes, hiking picnics, train stations — kimbap is everywhere in Korea the way sandwiches are everywhere in the West. It is portable, cheap, filling, and genuinely delicious cold.
Every convenience store (CU, GS25, 7-Eleven) sells triangle kimbap for about ₩1,500 — less than $1.20. It’s the fastest, cheapest meal in Korea. The tuna mayo version is the most popular. I ate it on the subway, on the 4 Rivers cycling trail, and at 2am after nights out in Hongdae.
Kimbap vs Sushi — They Are Not the Same Thing
This is the most common question. They look the same. They are wrapped in seaweed and sliced into rounds. But the similarity stops there:

Three things hit at once. First, Trader Joe’s started selling frozen mini kimbap — affordable, convenient, genuinely good — and it went viral on TikTok and Reddit almost immediately. The “Trader Joe’s kimbap” search exploded.
Second, the cupbap trend. Cupbap (컵밥 — cup + bap) is the Korean convenience store version: seasoned rice and toppings in a cup, designed to eat standing up. Searches for “kimbap and cupbap” are up +26,950% in 90 days. That is not a typo.
Third, mukbang culture on YouTube and TikTok. Korean food content drives enormous engagement — and kimbap makes for extremely satisfying video. The ASMR crunch of slicing a roll is almost unfairly good.

🥫 Classic (Spam + Egg)
The original. Spam, egg, pickled yellow radish, spinach, carrot. The one you get at every Korean convenience store. Sweet, salty, perfectly balanced.

Most popular single variety. Canned tuna mixed with mayo and a little corn. The triangle kimbap you see stacked in every GS25. Incredibly addictive.
🥩 Bulgogi
Marinated beef kimbap — more of a sit-down restaurant version. Richer, more filling. Common in Korean lunchboxes (dosirak) for long days.
🧀 Cheese
Modern take — a slice of American cheese or mozzarella melted in. Creamy, mild, great for kids. The same logic as adding cheese to Buldak — fat cuts the saltiness perfectly.
🌿 Mayak (Mini)
Mayak kimbap = “drug kimbap” — so named because they’re tiny and addictive. Dipped in a soy-mustard sauce. You eat 10 before you realise what happened.
How to Make Kimbap at Home — What You Actually Need
Three things. That is genuinely it. The fillings you can improvise — anything works. But these three you need to get right:
1. A Rice Cooker — The Most Important Step
Kimbap lives or dies on the rice. It needs to be short-grain, sticky, and perfectly cooked — slightly firm but cohesive enough to roll without falling apart. The Instant Pot nails it every time: 1 cup rice, 1 cup water, high pressure 3 minutes, natural release 10 minutes. Perfect sticky rice, every time, no watching.
2. Full-Size Nori Sheets (Gim) — Get the Right Grade
Not all seaweed is the same. Kimbap needs full-size, gold-grade roasted nori — thick enough to hold a full roll without tearing, but not so thick it’s chewy. How to Make Kimbap — Step by Step
For 2 rolls (feeds 1-2 people):
- Cook 1 cup of short-grain rice in the Instant Pot (3 min high pressure, 10 min natural release). While hot, mix with 1 tsp sesame oil + ½ tsp salt.
- Prepare fillings: pan-fry 2 eggs into a thin sheet and slice into strips. Blanch spinach, squeeze dry, season with sesame oil. Julienne 1 carrot and stir-fry 2 min. Add sliced spam or canned tuna.
- Place a nori sheet shiny-side down on the bamboo mat. Spread rice in an even layer leaving 2cm at the far edge.
- Line all fillings in a row across the middle of the rice.
- Roll forward firmly using the mat, pressing as you go. Seal the bare edge of nori with a grain of rice or wet finger.
- Brush the outside lightly with sesame oil. Slice into 8-10 rounds with a sharp, oiled knife.
Total time: 30 minutes. Keeps in the fridge for 24 hours (the rice gets firmer — some people prefer it that way).
Before rolling, lay a slice of American cheese or a strip of mozzarella alongside the other fillings. The fat from the cheese works through the roll and makes every bite creamier and slightly richer. How do you pronounce kimbap?
